[Clean-up] Planned removal of the `max_size` argument

- Replace deprecated `"feature_extractor_type": "YolosFeatureExtractor"` with `"image_processor_type": "YolosImageProcessor"`
- Remove deprecated `max_size` and replace `size` with a `Dict`
