Maybe separate by difficulty? I see 3 different possibilities: 5-10 letters, 10-15 letters, 15-20 letters, random; 1 spaces, 2 spaces, 3 spaces, 4 spaces, random, hide spaces (you could maybe shift colors or have breaks appear after a win). Maybe offer hint modes?

My suggestions would be idioms and tongue twisters, like "when it rains it pours" or "rubber baby buggy bumpers" even though they're a bit more than 20 total letters. Maybe as an unlockable mode?
